簡単なので時折作ります。白ワインに合うし。蒸し器が小さいので身を半分にして、2回蒸したりしても手間はない。塩をまぶした後、タイム、ローリエ、レモン、白ワインを添え、砂糖も少し振って、蒸す時間は12-13分。仕上げに溶かしバター[10g未満]をかけて完成。でも連れ合いは塩焼きの方が良いと言います。

I cook this dish once in a while, as it is
very easy and goes well with white wine. The steamer is often too small for a
whole fish, but cooking the halves twice is not a problem. First, salt the
fish; put laurel leaves, thyme, lemon slices, some white wine and a bit of
sugar around the fish on a plate; steam for 12-13 minutes; put some melted
butter before serving. That’s all. My wife prefers simple snapper
grill with salt though…
