Suzu - 鎌倉の野菜フレンチ



今日開店時間に電話したら運良くランチにテーブルを確保できた。腰越の江ノ電通りに面したこの店は行く前に気づいたのだが、以前はイタリアンのロアジがあったところで、壁の内装にも見覚えがある。テーブル4卓10席の小さな店で、野菜にこだわってデザートまで創意工夫を凝らしたフレンチを若い二人が切り盛りしている。開店してちょうど1年とのこと。それにしてもお箸が添えられたフレンチは久方ぶりだ。
前菜はそんな気合いの入った野菜のパレード、いろんな味が交錯する中で僕は赤玉葱の美味しさがとりわけ印象的だった。続くゴボウのポタージュは絶品と言いたくなるくらい脳裏に刻まれる一品。メインに選んだスズキのソテーもマスタード・リーフやトマトをあしらった彩りで、ソースは薄味指向の僕の基準では若干だが濃い目だったが、どの料理も目を楽しませるプレゼンテーションは見事。デザートはパティシエの奥様が担当だと思うが、三品のオプションが「湘南ゴールドソルベとチーズケーキ」「フレッシュイチゴのスープに小豆アイス+酒粕クランブル+餅」「フォンダンショコラと蜂蜜アイス」と、どれも興味をそそるものばかり。フォンダンショコラは通年出しているとのことなので、和を取り入れたイチゴスープを試してみて、これも正解だった。コーヒーはカプチーノでもラテでもOKだし、凝ったオーガニックティーバッグも数種のチョイスが可能だ。
あまりに満足なランチだったので、帰って調べてみたら(食べログ情報からの受け売りだが)シェフは渋谷のTSU・SHI・MI(=1度は訪れてみたいと思っている野菜フレンチ店)出身と知って大いに納得だった。







As the restaurant opens at 11 this morning, I phoned for a table at lunch time and luckily managed one. I recall there used to be Italian “Loasi” in this exact location a few years ago along the street car line of “Enoden” in Koshigoe, and I actually remembered the interior. This is a small French cuisine with only 4 tables for 10 guests, since April 2014, but a young couple creatively focuses on vegetables. The last time I saw chopsticks with the cutlery in French was some 40 years ago!
First came a parade of vegetables on the plate of hors-d’oeuvres, a variety of flavors in harmony, and I found the red onion was most tasty. Next was burdock cream soup that was outstandingly fabulous and vividly stored in my memory. I chose sea bass sauté as the main dish colorfully arranged with mustard leaves, beans, and baked tomato slices. The presentation of every dish was wonderfully beautiful.
The wife of the chef must have been in charge of the desert, and the 3 options were too attractive to pick one: “Shonan gold sherbet & cheese cake”, “Fresh strawberry soup with ice cream of azuki bean & sake lees crumble”, or “Fondant chocolat & honey ice cream”. The options were even for coffee: espresso, cappuccino or latte, and for tea among organic and stylish tea bags.

I was so satisfied with this lunch (2700 Yen) that I searched the internet upon returning home and found that it entirely made sense because the chef used to work in the cuisine of TSU.SHI.MI, known for superb vegetable presentations, that I have been hoping to visit once in Shibuya!

小海線のレストラン・ストローハット - Restaurant Straw Hat

国道141号沿いの海ノ口に家族経営のレストランがあって、どこから見ても普通のドライブイン・レストランなのだが、ディナーを予約すると料理人がフレンチ・シェフに変身して、途方もない雰囲気のミスマッチ感と共に、今夜はどんな料理を並べるのかとワクワク気分でコース料理を楽しませてくれる。彼は親父から店を引き継いで以来、持ち前の研究熱心さから、単なるドライブインでは終わらない切り札を一枚着実に仕込みつつある。こんな片田舎でも(というと語弊があるが)、地元に根付いたビストロがあるというのは何とも心強い。


On Route 141 along Yatsugatake mountains is a family-owned restaurant in Koumi, and it looks like an ordinary drive-in restaurant, but when you make a dinner reservation, the young cook turns into an ambitious French chef to prepare an excitingly interesting course menu in this totally mismatched atmosphere. He took over this facility from his father, and managed to add a spice in it that is superficially invisible. It is wonderful to find a local and reliable bistro in almost hopeless environment like this, and that is why I always want to come back to Straw Hat.

過日のおまかせ料理を紹介しておこう。まずはサツマイモのポタージュから始まり、有坂さんちの庭先卵、ウニと甲殻類のカプチーノ仕立てが続き、可愛いキッシュも添えられていた。この日はさらにエスカルゴからヒントをもらった新潟産サザエのアヒージョが出て来て、これは我が家でも簡単に行けそう。

ここでサイコロ型の自家製パンとパテが登場し、コースのメイン料理となる。魚は高知産寒ブリのポワレに菜の花添え。肉はシャラン産鴨胸肉のロティだ。鴨は熟成感のある良い肉だったが、鰤については僕はカリッとソテーでもした方が素材に合うかなと思った。

仕上げは通常パスタになることが多いが、この日は気合いを入れてもらってアクアパッツァ仕立ての一口炊き込みご飯で、全員の絶賛を浴びた。デザートは予約時に友人が希望を伝えていたモンブランが出た。

A Private Wine Party - 江古田のラ・リオンにて

Intimate supporters and old friends of Hiro Kusuda gathered in a party that took place at La Lionne while he made a brief return home. Quite a fun event enjoying conversation and tasting wines that Wine Cellar Asahiya arranged. Some of the bottles were actually brought by the party attendees. La Lionne is located in Ekoda, Nerima, and it was chosen by Asahiya for convenience of its neighborhood. I should stress that the lever paté was excellent in this restaurant.



楠田ワインの馴染みの支援者や浩之氏の古くからの友人が集うワインパーティーがフレンチ・レストランのラ・リオンであった。彼が短い帰国を果たしている間のことで、アサヒヤさんが段取りしたワインをテースティングしながら、親しい会話が弾む楽しい時間だった。中には参加者が持参したワインも含まれる。ラ・リオンは練馬の江古田にある店で、この立食会でレバー・パテが印象的に美味だったことを書き留めておきたい。

ストーブと岩鋳 - Staub and Iwachu Nanbu Iron

最近、我がキッチンに鉄鍋がふたつ加わった。僕はあまり揚げ物をしないので、これまでは小さな薄い安物なべて誤魔化していたのだが、流石にいつまでもそうは行かないなあと鉄鍋を物色することにした。大昔、学生時代にル・クルーゼの青い片手鍋を使って重宝していたので、今回もまず小ぶりなStaubをウォッチしてみたが手頃価格で出物に遭遇することはなくて、多目的性は諦めて南部鉄のてんぷら専用鍋に方針変更、最終的に岩鋳の20cmサイズがデザイン的にも合格。どのショップでも価格が大体4000円くらいの商品だが、斉藤森魚商店で格安に買えるのを見つけた。予算は格段に圧縮できたし、利点として油を流す口がついている点も見逃せない。満足の行く買い物だった。
それから年が明けて先日、友人からStaubを譲っても良いとの話が舞い込んできた。愛用してきたものの段々その重さが苦痛になってきたのでというのが理由だ。サイズは22cmだが、それでも普通の主婦には上げ下ろしだけでも負担となるのは確かだろう。Staubは肉料理はもちろん、野菜を煮ても良し、ご飯を炊いても良し、しかもどの料理でも旨いものに仕上がるから、台所の中心的存在になるだろう。




Two ironware joined in our kitchen recently. I don't fry much often, and I used to do with a tiny, cheap pot when it comes to frying, but it can't go on forever and I decided to look for a proper iron pot. Many years ago when I was a college student I had a small Le Creuset that was quite handy, so I first looked into a Staub but I could not find a reasonable deal. Giving up a pot for all purposes, I focused on Nanbu iron specifically for tempura instead, and found that Iwachu had one with 20cm diameter which was quite stylish. It normally costs around 4000 Yen in most shops, but I managed to discover that Saitoh Morio Store offered a more attractive price. It was a satisfactory purchase.

Soon after this addition came a surprising offer from a friend of mine. She had a 22cm Staub that she was willing to give up despite her affection   due to its painful weight. Staub is versatile: varietal meat dishes without saying, and also excellent for simple steaming of vegetables and even cooking rice. A truly good cook in all directions!

紬山荘 - Tsumugi Sanso


八ヶ岳方面に向かう途中、山梨の長坂ICを降りて昼食に立ち寄った。場所を特定するのはちょっと努力が必要だが、何もない周囲には場違いなくらいセンスの良い棟を構え、昼は蕎麦、夜はフレンチを供する。

もともとは東京でやっていたワインバーを畳んでこちらに来たとのこと。前菜のマリネは確かにフレンチ的。そして鴨ネギのつけ汁が美味。来春から1室宿泊も始めるらしいので、そうなったら是非ともディナーに来ようと思う。





We get out of the highway at Nagasaka interchange in Yamanashi prefecture on way to Mt. Yatsugatake, and stopped by at this restaurant for lunch. It may be difficult to find the spot in the middle of nowhere, but this stylish house stands out in its neighborhood. They offer soda noodles in the lunch time, and French dinner in the evening.
They used to run a wine bar in Tokyo before, and indeed had the starter a slight French flavor. The noodle I had was canard and green onion the dip soup of which was very tasty. They plan to open a room facility for lodging starting next spring, and it may be convenient for me to try their dinner with a relaxed stay.

O Comercial, Lisboa - リスボンの昼食


春の旅行記でポルトガルの部分を欠落させてしまったが、忘れてはいけない店がふたつあった。そのひとつがO Commercial。日本で言えば経団連みたいな団体があって、そのビルは歴史的建造物なので館内ツアーもできる。我々は ランチの予約を入れて、それまでの待ち時間を埋めるべくツアーに参加した。看板には前衛ポルトガル料理と謳っており、ここは絶対お薦めとフランスの友人から言われたお店だ。中はゆったりとして静かで、落ち着いて昼食が取れるレストランだった。この雰囲気は素晴らしい。穴場なのか客は少ない。料理はどれも品のあるプレゼンテーションで、供されるハウスワインもしっかり美味しい物を選んでおり、給仕に尋ねるとデパートで買えるよと答えていた。€15ランチとしては抜群のコスト・パーフォーマンスと断言できる。




I failed to cover the portion in Portugal in my past trip uploads, but we had actually a couple of lunches that should be remembered. One is O Commerical in Lisboa. Portuguese commercial industry owns a historical building in Lisboa, and they organize interesting tours inside. We booked our lunch at their museum shop and a tour was ideal to kill time before eating. This restaurant was strongly recommended by a friend in Paris, and the panel in front said "progressive Portuguese cuisine".
As we go in, the restaurant was not busy at all unexpectedly, but the area was calm, quiet and spacious. Also, the service was appropriately attentive for us to fully enjoy a wonderful lunch. Dishes were all beautifully prepared and the wines that came with were nice. I asked about these bottles to the waiter who told us they were available in the local department store, too. This was a superb €15 lunch!!

名月リンゴ - Meigetsu apple


北軽井沢の農産物直売場で数種類並んでいたリンゴの中から「名月」というのを一袋買って帰った。割安だったからだが、聞いたことのないこの黄色いリンゴがとても美味しかった。

Visited Tsumagoi the other day and saw a few different kinds of apples at farmer's market in Kita-Karuizawa. I bought a pack of "Meigetsu" as I was totally unfamiliar with this. It was cheap but surprisingly tasty.

Poco Dolce - サンフランシスコのチョコレート

先月サンフランシスコに行った際、みやげ物を物色する時間がなくて、帰国する日の朝早く近所のスーパーWhole Foodsに行ってチョコレートを仕入れることにした。サンフランと言えば空港でも買えるギラデリでは芸がない。Whole Foodsには数種類の地元ブランドを揃えていて、他所ではなかなか手に入らないと思うので珍しさとしては申し分ない。僕は4種類ほど選んで持ち帰ったが、その中で一番お薦めできる品質のチョコレートがこれだった。オリーブオイルと塩を練り込んだPoco Dolceのダークチョコレート。



During my recent trip to San Francisco, I had no time for shopping souvenirs, and I inevitably stopped by at Whole Foods on my way to the airport back home. The idea was some local chocolates because Ghiradelli to represent SF sounded simply too straightforward and touristy. Whole Foods carries several small brands of local chocolate and I picked 4 different kinds among them. The most recommendable was this Poco Dolce, and this particular version blends olive oil and solt in the dark chocolate.

Lunch at Marroad Karuizawa - 軽井沢ランチはマロウドで決まり!

週末の北軽井沢クラフトフェアに行ってみるプランを立てて金曜日から出発、軽井沢で昼食することにした。最近、外食はどこも割高感が強くなって、なにしろ物価が高い軽井沢では尚更だ。南口のアウトレットを例に取ると、模様替えして通りに面した各店でも2000円台が標準という勢いで、それが現実にはどこも慌ただしく雑然とした雰囲気だし、ヴァリュー感が乏しいとなると、久しぶりにホテル・マロウドまで歩く方が賢明と考えた。
ここリュミエールの夕食については以前紹介しているが、今回はランチの紹介だ。時間は12時半を少し過ぎていたが、我々が最初の客だった。コースメニューは2200円と4300円の2種類、我々は迷わず小さい方にする。
まずクレソンなど地元野菜のクリームスープで始まり、ここで早くも両手を挙げて「参った」と言いたいくらいの美味しさだ。メインディッシュはオマールとリドヴォーのパイ包み焼きを選んだら、温野菜などとハーモニーを奏でる一皿として登場した。デザートはフランボワーズのソルベとブラウニーで、果物も口直し的にほんの一口添えられていた。
軽井沢の目抜き通りの混雑とは無縁の静かで落ち着いた時間がここにはあり、舌と目の両方で楽しめる得がたい食事となる。サービスもしっかりしていて安心だ。




We had a tour plan visiting Kita-Karuizawa for a craft fair in this weekend, and we left home on Friday stopping by at Karuizawa to have lunch. Dining out tends more expensive recently after the raise of consumption tax in April, and it appears to be more obvious here in Karuizawa, known for most expensive area to live in the neighborhood. Lunches seems typically $20 or so in restaurants with moderate appeal. Those looked busy, noisy, lacking calm atmosphere, and we could not appreciate much value in them, therefore we felt we should walk to Hotel Marroad.
It's roughly 15 minutes walk going beyond Ohga Memorial Concert Hall, or a short cab ride from North Exit of the train station.
It was a little after 12:30 when we were guided to a table in Lumière, the restaurant in the hotel, and we were the first guests. They offer 2 courses of menu for the price of 2200 Yen or 4300 Yen, and we chose the small one.
It started with the vegetable cream soup that was fascinatingly tasteful. We both chose baked lobster and ris de veau in pie skin for the main dish, which showed up as a harmonious plate with warm vegetables. The dessert plate consisted of framboise sorbet and browny with a few small bites of fruits.
This is a totally different space from crowded Karuizawa where we can have slow and relaxed time with enriching lunch to amuse not only tongues but also eyes. I should also add that their service is very reliable.

パニーニ・トースター - Panini

今回の米国旅行で何度かパニーニを食べた。朝食のバリエーションとして重宝するし、レストランで出てくることもあった。そう言えばうちでもカミさんは時々パニーニ・パンを買っているが普通にトーストするだけなので、この際トースターを調べてみることにした。
Cuisinartとかは当然1万円以上するが、Amazonに3000円台の製品を見つけた。届いた製品の本体にスイッチはなく、コンセントの抜き差しで通電という超簡素設計、僕はスイッチ付きコンセントにつないで使うことにする。6枚切り食パンの間に具を挟んで焼いてみると、1cmに満たない厚みなので仕上がりはちょっと薄手な感じかな。




I had a few occasions to enjoy panini during my recent trip to San Francisco. I understood it as a useful variation for breakfast, and even in a restaurant dinner they offered one. In my home, my wife sometimes buys panini but only toast them like other usual bread. I looked into the toaster products this time.
As expected, the price was over $100 for known brands such as Cuisinart, but in Amazon there was one product sold for about $35.
This Estale toaster had no power switch in itself and you will turn it on by plugging it in the wall. I had a switched consent plug handy. The finished panini is about 1/3 inch thick and looks a little too thin to load some stuff in it.

今時のサンフランシスコで食事 - Dining in San Francisco Just Recently

一週間ほどサンフランに行ってきた。外食で報告しておくお店が三軒。

Kusakabe:
寿司懐石の店で、オープンは今年の初夏。おまかせコースのみ、ネタはすべて築地から毎日取り寄せているらしく、米国ではお目にかかりにくいものが楽しめ、トロはかなり印象良かった。他にメンドシーノのウニとか、日本産の鰯なども出て来た。寿司は一貫ずつで、ネタに味付けさせたものがこの店の得意技らしい。懐石なのに汁が味噌汁だったり、サービスのおばさんがえらく素っ気ないなど改善すべき点もあるが、味のバラエティを楽しませる流れはこれからもさらに高めて欲しいお店でした。


Chez Panisse:
アリス・ウォーターが率いるバークレーのこだわり食材の老舗。月曜のお昼で満席。全体的にはやや地味ながら堅実な料理。パンも美味しいし、一番印象に残ったのはゴート・チーズでした。


Frances:
自転車レース"Tour de Fuzz"完走を祝して最終日の夜に食事したフランシスは予約が一ヶ月以上待ちの超人気店とのこと。確かに気鋭の趣がある料理傾向。でもステーキ肉はイマイチだった。お昼に来てみたい。





SIGHTGLASS - サンフランシスコのカフェ



ここ数年、サンフランシスコで人気のカフェだと連れて行ってもらったサイトグラスは町の中心部からは少し外れて、デザイン会社などが集まる再開発地域にある。素朴に古さを醸し出す内装で、珈琲を淹れるサービスもわざと遅くして時間をかけている。客もこのまったり感を楽しむようにここにたむろしている。忙しいビジネス客には付き合えないテンポだ。BGMもLPレコードを何とマッキントッシュのアンプから流している。東京進出が予定されているとのこと。


I was taken to Sightglass cafe in San Francisco that is said very popular in recent years. The interior was simple and classic, and the service was intentionally slow. They take extra time to blow coffee. Guests seem enjoying this relaxed, slow atmosphere that busy business people would not be able to cope with. The background music was from LP records through McIntosh amplifier!

O’Xugo, Monforte de Lemos - 庶民のスペイン・バル



モンフォルテ・デ・レモス2晩目の食事は軽くバルでつまむことにして、街中の外れにあるO’xugoという店に行ってみた。片側6-7人が座れるベンチを挟んだ大テーブルが数多く並ぶ一角に通され、Estrellaのビール、白ワインと共に定番料理3皿を注文。さらに後で2皿のタパスを追加して、その精算時に代金がわずか€5弱と聞いて驚愕+感激!楽しく食べてこれは庶民の味方です。モンフォルテに来たら必ず行ってみよう!


In the second night in Monforte de Lemos, we decided to have light supper in a bal, and picked up O’Xugo in town. Large tables are lined up each with a pair of long bench for 6-7 people on both sides, and we were seated in one of them. We order a glass of Estrella beer, a glass of white wine, and 3 plates of tapas. We later added 2 more plates, and to our surprice and delight, the bill for all these was only €5! It was definitely the friendly restaurant for everybody and you shouldn’t miss it when in Monforte!

Palador de Monforte de Lemos - パラドールの食事



モンフォルテ・デ・レモスのパラドールに滞在して、そのレストランで朝晩1度ずつ食事をした。
朝食はビュッフェ・スタイルで温かい卵料理は注文に応じて作ってくれる。ゆったりとした雰囲気の中で取る食事は流石に気持ちが良い。お皿の中央に置いたグラスの中身はトマトのジュレというか、ジュースにまで行かないよう粒々にミキサーした(すりおろし?)もので、これは逸品だった。朝食は€15で、ホテルとしては控えめ値段と言えるだろう。
夕食は最初の晩に行ってみたら、4組くらいの客がいた。量を抑えたいので前菜のホタテとメインのポークだけ注文。まずまずの味というところ。
今回はサンチアゴへの巡礼路に入る変わり種のルートということでここに来てみたが、居心地は良かったし、ここを起点にRibeiraのワイナリーをいくつか回ることも出来るので、お薦めできる。



Stayed in Palador de Monforte de Lemos and had a breakfast and a dinner in the restaurant during the stay.
The breakfast was offered in buffet style, and the eggs were cooked as requested. It was such a comfortable meal in a calm, spacious and relaxing atmosphere. The glass in the plate in the middle of the picture is tomato gelé, or mashed not too far as juice, and it was special. A €15 breakfast may be moderate for hotel price tag.
We had the dinner in the first evening, and 4 tables were occupied including us. I only ordered scallops for the starter and pork for the main dish as I wanted to limit the whole amount, and both were quite enjoyable.
We came to Monforte de Lemos as a uniquely interesting entry route to Sarria, the Camino to Santiago de Compostela. The result was superb comfort and one could add arranging a tour to some Ribeira wineries from here. We can recommend a stay.

ログローニョのタペリア - Taperias in Logroño




「ログローニョはサンセバスチャンに負けず劣らずピンチョスが楽しめる街だから、必ずローレル街へ行け」とサラゴサのイタリア人給仕君に教わっていたので、我々は2晩ともそこに繰り出してワインとタパスのハシゴにいそしんだ。
海外では食事の量に閉口するとこが多いので、スペインのタパス、ピンチョスはまさに日本人には有り難い食習慣だ。我々の主眼はパンが土台になるピンチョスや揚げ物ばかりのバルより、小皿料理がいろいろ楽しめそうなバルを捜すことにしていた。まず客で賑わうお洒落なLa Fontana、魚類がいろいろありそうなEl Palillo、とりわけ盛り上がったのはガリシア風タコが売りのLa Unversidadで、その後も巡礼路に入ってタコを食べる機会は多かったが、ここで食べたタコのマリネは抜群に美味しかった。
唯一残念だったのが、2晩目火事騒ぎで通りの一部がしばらく封鎖され、興味ありながら行き損なってしまったTastavinかな。





“When in Logrono, go to Laurel Street because tapas there is as good as San Sebastian” told us the Italian garçon in Zaragoza restaurant, and we were fidel to the suggestion finding bals for tapas and wine in this interesting street.
Once in abroad, we Japanese often suffer from the amount of food we have to deal with in lunches and dinners, and the Spanish habit of biting small plate tapas becomes a great relief. In this trip, our strategy was to avoid bals where only pinchos with bread or mostly fried material lined up, and rather focus on variety of cooking on small plates. La Fontana was refined and busy, El Palillo had choices of sea food, and La Universidad specialized with octopus in particular had wonderful marinated octopus. It was actually the best among many octopuses we later had in Gallicia.
One bal we missed though was Tastavin which was very tempting but there was a fire nearby the second night and the street was partially blocked out for a while.
