リオハのワイナリー巡り - Bodegas Tour in La Rioja



ログローニョでの中一日はワイナリー訪問をしようと考えていたので、サラゴサで飲んだモスカテルをネットで探してその産地サダシアが特急で一駅のCalahorraにあることを突き止め、宿のお姉さんにお願いしてMaetierraワイナリーに電話して見学について聞いてもらうことにした。ネットで見つけた電話先はメーカーのワイナリーではなく営業オフィスだったようで、いずれにせよ見学は受け付けていないという返事だった。そこでツアーは元々の計画通りバスでアーロに出掛けることにした。

リオハワインの中心地アーロはバスで約1時間、到着したターミナルから歩いて行けるワイナリーとしては鉄道駅方向に3-4軒並んでいるビスカヤ通りが狙い目。まずMUGAという構えの立派なワイナリー(ここは基本的に予約制)に入ってみたが、ツアーは朝の10時半に出てしまうので当日は不可とのこと。仕方ないのでショップでの有料テイスティングをしてみた。ボトルには結構強気のプライスタグが付いているが、特に印象に残るワインはなく、ここは儲かっていて羽振りが良さそうだが、総じて事務的だ。我々が次のワイナリーに移動すべく退出するのと入れ違いに中国人と思われる3人組が入ってきた。



続いて隣はTONDONIAで、名前はチェックしておいたボデガスなのでやや期待はある。構内に入ると人影がなく、一番奥のショップに行き着いた。テイスティング・エリアは凝った作りだが、何となく第六感的印象が薄かったので人を捜すより次のワイナリーに先に進むとこにした。


ボデガスALTAは入って右手の建物を覗くとそこは事務所らしく、出てきた女性社員に反対側の建屋に連れて行かれた。ちょうどツアーを始めたところらしく、2人の米国女性を相手にガイド役の若手スタッフが英語で説明中だ。我々も首尾良くそこに滑り込み、スペインぞっこんの米国チームとも意気投合して極めてアットホームで楽しいツアーとなった。リオハのラベルが許されるのは条件を満たした赤ワインだけと教えられた。ここでのツアー料金€10はワインを購入すれば戻すとのこと。




The second day in Logrono was supposed to be a winery tour entirely, and as we couldn't forget the Maetierra moscatel that we had in Zaragoza, we checked the net and found Sadacia area was actually in Calahorra, the next stop with an express train, and we asked the assistant in our hostel to make a phone call to find some visit detail. Unfortunately, they offered no tours in their winery, and we had no other choices but the original bus ride to Haro.

Haro is the center of Rioja, and about 1 hour from Logrono by bus. If you walk to wineries like us, the most efficient would be Vizcaya Avenue toward Haro train station where 3 or 4 bodegas line up. We first went to MUGA through their sophisticated entrance with a train. The tours are basically on reservation basis, and they already started at 10:30 in the morning unfortunately, so we had tastings in the shop (the fee depends on your combination). The price tag on the bottles tended to be aggressive, and their business appeared to be in good shape, but the general attitude was like typical majors a bit square. As we go out for the next bodegas, a group of three Asians, seemingly Chinese, came in.

TONDONIA is the neighbor and I had checked their presence with certain expectation. We saw nobody in the facility and ended up into the shop with a gorgeous tasting area. My sixth sense was not so positive with their bottles though, and thus we moved forward to the next bodegas instead of further looking for some one.

The third bodegas was ALTA. We first entered the building on the left. It was their office, and a lady took us to the winery area on the other side. A young staff was talking to two American ladies in English, and we could merge ourselves to the group smoothly. The ladies were very much into Spain, wine and everything, we had a good time throughout the friendly, family-like tour. We learned that “Rioja” label was only allowed to certified red wines. The €10 tour fee will be refunded if you buy wines there.

Bal d'Onsera, Zaragoza - サラゴサの一つ星

サラゴサでの夕食はいくつかの候補をTripAdvisorの書き込みを基に考えてみたが、繁華街から少し離れる店もあったので、近場を歩いて探索してみることにした。その中でシンプルモダンな構えの小さな店bal d’onseraに惹かれた。とは言えコースメニューが35€くらいで、散財を考えていない我々はちょっと気持ちが引き気味になるのを、アラカルトで軽く食べれば良かろうと思い切って入店。店の外観はバーカウンターが見える程度でそれほど親しみを感じる雰囲気ではないが、ワインラックの奥にはそこそこ落ち着けそうなレストラン空間があった。

スタッフは皆若手で、しっかり対応してくれ、スペイン語メニューに苦労する僕らを助けてくれたのは彼女を追ってサラゴサに住み着いているというイタリア人の給仕君だった。まず前菜の茸のリゾットとイベリコ豚のタルタルが見事でこれには舌を巻いた。話を聞いてみるとどうやらこの店はミシュランの★ひとつを獲得しているらしい。メインの後、デザートは回避してその代わりにデザートワインとかはないのと尋ねたら、メニューには書かれていないリオハのモスカテルがあるよとグラスを持ってきてくれた。これがとても気に入ったのでMaetierraのMelanteと早速記憶に留める。Sadaciaと呼ばれるエリアのワインで、ログローニョの近くだ。この日は締めて2人で40€程度で一つ星の味、ここで食事を取るためにもう一度サラゴサに来てもいいと思わせるお店だった。








With some candidates picked up from TripAdvisor in mind, we walked around the neighborhood for a while, and a small bal-restaurant with simple and modern look appeared interesting to us. The price of €35 for the course menu was slightly over-budget but we decided to step in as we thought a lighter a la carte dinner would work. The entrance area with a small bar counter wasn’t too inviting, although behind the wine rack was a more relaxing space for dining.
The staff was all young guys, very supportive and efficient. We were attended by an Italian who settled here because his girlfriend lived in Zaragoza. The starter we chose were mushroom risotto and Iberico tartar which were an absolute marvel. It makes sense they carry a single Michelin star that came to our knowledge later. I asked after the main dish if they have any wine in place of a desert, and they brought a glass of local moscatel to our delight. Maetierra’s Melante from Sadacia was permanently stored in our memory. We spent some €40 for two the night, and we would be happy to come back to Zaragoza again for a more complete dinner here.

Bistro La Peknikova – 北鎌倉のラ・ペクニコヴァ


友人との昼食で初めてトライ。この道は自転車で時折走っていたルートだが、北鎌倉の駅から山ノ内貯水場に向かう上り坂道を20分くらい歩くというのは普通の人なら願い下げだと思う。
一軒家の住宅の一階にテーブルが4つ、テラスからは斜面の向こうに広がる緑が見渡せる。台湾リスの出没も目撃。この店を切り盛りしているのは若い夫婦。出てくる料理の味付けやソースはどれも上品ながらしっかりとした味わいがあり、楽しい食事となる。
前菜では写真手前左のホタルイカ、右上のカリフラワーなど野菜のマリネが絶妙な味だ。ハムも自家製とのこと。新玉葱のポタージュに続き、僕は豚肩ロース肉のコンフィを選んだが、プロの手に懸かるとここまで行くのかとこの仕上がりには唸ってしまった。デザートは3品からクレープ・シュゼットにした。
このベーシックなコースが2500円だが、デザートは+500円、グラスワインをもらうと約4000円のランチということになる。どれも量的には小さいので、女性客にはちょうど良いという感じか。良い店に出会ったという満足感があった。

丸中醤油 - Marunaka Soy Sauce


うちでは消費税アップに向けてのまとめ買いは積極的にしなかったが、それでも少しは抵抗して、ちょうどストックが切れる食材を早めに仕入れたりした。醤油は掛川のメーカーから購入することが多いのだが、今回は京都に近い滋賀県産の人気商品に格上げしてみた。
Everybody rushed to stores before the consumption tax was raised in April here in Japan. We didn't buy much, but did a small resistance effort ordering some stock items. We often buy soy from a manufacturer in Kakegawa, but this time we chose a slight upgrade from Shiga prefecture near Kyoto.

新宿御苑のアルテシア - Italian Bar Artesia

昨夜は大学時代の小グループで同窓会。新宿近辺で集まれる場所を探してこのイタリアン・バルに落ち着いた。料理はハム類、カルパッチョ、パスタなど、どれも食材にこだわりを持ちおいしく供される。リストランテとかトラットリアといった気取りもなく、味も単にイタリアンというより何だか丁寧に美味い家庭の味という感覚になれる落ち着いた雰囲気の小さなお店で、参加女性陣も満足そうだった。飲んだワイン、ヴェルデッキオは通常より甘みが強め、プリミティーヴォはしっかりしていた。


A small group reunion of university class mates last night, and we gathered at an Italian bar near Shinjuku-Gyoen park. The course menu included some assorted ham, carpaccio, salad, spaghetti of cabbage and shrimps before the main pork roast, each of them was with carefully chosen material and quite good. Artesia's atmosphere is nothing classy like ristorante or trattoria, a truly relaxing small space, and I thought its taste of very well cooked home dishes than simply Italian that made our female members very happy.

蔦屋書店 - Tsutaya Bookstore


この連休に友人と代官山ASOで待ち合わせてパスタランチをした。道路に面した入口部分はカフェ・ミケランジェロと呼ばれている。スパゲッティの茹で方はバッチリ、でもカップスープはもう少し良いものにして欲しいかな。その後、道路を挟んで向かいの蔦屋書店に移動、その来客の多さにびっくり。話題の2F喫茶に座って話の続き。注文した抹茶エスプレッソは¥950。美味い。


Had lunch at ASO in Daikan-yama with a friend last weekend. The area near the entrance facing the street is called Café Michelangelo and their spaghetti boiling was just perfect although the small cup soup should be improved. We then moved to Tsutaya bookstore across the street that often shows up in variety of media. They have a spacious café on the second floor where we continued our conversation and had Maccha-espresso. Pricy 950 Yen and excellent.

Souvenir from Portugal - ポルトガル土産


年末にポルトガル旅行した友人が土産話持参で訪ねて来るというので、軽い食事の用意。ポルトガルは我々も行き先として暖めているひとつなので、まずはともあれ写真を見ながらあれこれ情報収集してから、食卓に移動し、いただいたの缶詰を開ける。Lulasと書かれたこの缶詰の中身はイカに米、玉葱、トマトを詰めてオリーブ油漬けしたもの。意外にサッパリ味。



A friend of ours visited us with some souvenirs of her recent trip to Portugal, so I prepared a light meal. Our conversation started with the photos she took for us to get variety of information, and then we move to the table. This Lulas is canned squid stuffed with rice, onion and tomato in olive oil. Favorably light taste.



こちらはそれに三つ肴を加えて、クレマン・ドゥ・ブルゴーニュで応えた。あいにく客人はほとんど飲めないので、ボトルはこちらが独占状態。写真にはないが、この後は仕込んでおいた筑前煮とちらし寿司、アサリの汐汁に進む。



I responded with a bottle of Crémant de Bourgogne and three kinds of typical New Year dishes. Our guest does not drink much and thus the bottle is almost mine! Actual meal followed after this with “Chikuzen” vegetables, “Chirashi-sushi” and clear clam soup.

鯛のレモン蒸し – Steamed Red Snapper with Lemon and Herb

簡単なので時折作ります。白ワインに合うし。蒸し器が小さいので身を半分にして、2回蒸したりしても手間はない。塩をまぶした後、タイム、ローリエ、レモン、白ワインを添え、砂糖も少し振って、蒸す時間は12-13分。仕上げに溶かしバター[10g未満]をかけて完成。でも連れ合いは塩焼きの方が良いと言います。

ホイルは通常不要ですが・・・
I cook this dish once in a while, as it is very easy and goes well with white wine. The steamer is often too small for a whole fish, but cooking the halves twice is not a problem. First, salt the fish; put laurel leaves, thyme, lemon slices, some white wine and a bit of sugar around the fish on a plate; steam for 12-13 minutes; put some melted butter before serving. That’s all. My wife prefers simple snapper grill with salt though…

江ノ島のロアジ – Loasi in Enoshima


ロアジはしばらく閉店していたのだが、場所を江ノ電の江ノ島駅近くに移して今年再開した。友人とのランチに金曜日、この新店舗に初めて出向いた。既に年末ということもあってか、それほど混んでいなかった。中はもちろん新装でもあるし、少し上品になった感じだ。
今回パスタは飛ばして、前菜盛り合わせの後はアクア・パッツァにした。相変わらず美味しく、美しい。グラスワインはジゴンダスを一杯、そのあとトスカーナのサンジョヴェーゼをいただいた。他にロッソ・ディ・モンタルチーノがあった。



I had lunch with a friend last Friday at Loasi in Enoshima. Loasi had been closed for a while since last year, and they reopened earlier this year in the new premise very close to Enoshima station. The restaurant was not full on the day probably because it was already end of the year. The new interior looked more sophisticated.
Dishes I had were antipasti misti and aqua pazza, skipping pasta, both beautiful and tasty. I picked among choices of glass wines Gigondas first followed by Tuscan Sangiovese. Rosso di Montalcino was another option.

Japanese Farm Food


良い本を見つけた。著者のナンシーさんはスタンフォード出身の才女だと思うが、来日して英会話の先生をしていた時の生徒だった埼玉の鶏卵生産農家に嫁いで以来20数年、義祖母を始めとする家族から和食文化の伝統を学び、そこで会得した広範な和食レシピだけでなく、食材や料理法についても体系的に解説した本を出版した。「日本の田舎料理」と題されたこの本には身近な家庭的料理も網羅されており、料理を通して日本の食文化に触れることができる英語の書物という点で素晴らしい一冊だと思う。そのことを彼女に伝えておこうと一筆メールを啓上したら、すぐに返礼があった。実はきっかけは彼女の生活ぶりを追跡するテレビ番組で、それに魅入られて早速Amazonに発注したのだが、1月5日朝フジテレビの新報道2001でも少し登場するらしい。話は変わるが、ひとりフレンチの食事に至った彼女の3.11東京体験は興味深い。


I came across with a wonderful book. The author, Nancy Singleton Hachisu, is a Stanford graduate and married to a Japanese chicken egg farmer more than 20 years ago whom she met as a student of English conversation. Ever since, she learned from grandma-in-law and other family members variety of traditional Japanese cooking. The book covers a wide range of cooking including popular family dishes, and even covers the ingredients and the methods analytically. This is a book written in English that enables you to access our culture through food and cooking styles, and I think it is very valuable. I sent an e-mail to the author as I wanted to express what I felt, and she immediately wrote me back. She will be appearing in a TV program called “Shinhodo 2001” in January 5 morning. By the way, her own experience on 3/11 in Tokyo ending up in a highly reputed French restaurant was interesting.

エビしんじょう – Shrimp “Sinjo”


 「富山湾の宝石」と称する白エビを買ってあったのだが、唐揚げとかかき揚げにしたくないのでそれならエビしんじょうにしてみるかと思い立った。但し量が少ないのではんぺんで25%くらい増量。身の部分はフードプロセッサーでミンチにするところだろうが、うちにはないのでなめろうみたいに包丁でたたいてからスリコギでつぶした。塩ひとつまみと酒少々でぱさつきを緩めておく。
具としては椎茸、人参、大根を出汁の中で茹でて、味を塩と醤油で整えて、しんじょうの身を加える。仕上げに三つ葉とカボスを添えた。ご覧のようにかなり大雑把だが、今日は自分用なので良しとする。


White shrimps are claimed to be the jewel of Toyama Bay that sat in my refrigerator. I did not want to fry them and came up with an idea of making “Ebi-Shinjo” soup. The shrimps were not enough but I could simply add 25% of “hanpen”. To mince them the easiest is using a food processor but I have a classic pestle instead.
In the meantime, I cooked shiitake mashrooms, slices of carrot and radish in boiling “dashi” stock, balanced the taste with a bit of soi souce, sake and salt, and then dumped the minced shrimps in it. The finishing spices are mitsuba leaves and kabosu tangerine. Quite rough cooking but that’s fine as it is just for myself today.

Gontran Cherrier - ゴントラン・シェリエ


渋谷・新宿に進出してきたパリのパン屋さん。テレビで紹介されて先日の三連休は行列ができていた。僕は行列までして買わないけど、ここに並べたのはクロワッサン、ショソン・オ・ポム、イカスミのフォッカッチャ。近所のビゴと比べると、サイズが一回り大きい感じ。香りはほのかで上品、味は他店よりずば抜けている印象はなく、ファッション的に人気を狙うやや軟派なパン屋の感じ。具が個性的なおかずパン系の方が面白いかな。

Another boulangerie from Paris in Tokyo. Because of showcasing in the recent TV program, there was a long queue in the shop on Sunday before last. I try when the shop is not too busy as I am reluctant to be in the line for bread and pastries. Shown here are a croissant, a chausson au pomme, and foccacia of squid ink, and their size looks bigger than Bigot’s in my neighborhood. The flavor is subtle and nice, while the taste does not seem exceeding other reputed shops. Rather fashionable approach than pure quality. I tend to find the bread with cooked ingredients (e.g. muffins) more characteristic and interesting.

Laîné - 鎌倉のフレンチ



八幡様近くのレネは夫婦二人で切り盛りしている小さなお店で、過去に何度かトライしてうまく設定できなかったのが、先月ようやく食事をした。米国から旧友が来日して週末は暇と言うので鎌倉まで足を伸ばしてもらって、北鎌倉の円覚寺を散歩し、映画関係のエンジニアなので小津安二郎の墓にも連れて行った。フレンチは彼の希望でもあり、楽しい時間が過ごせた。お隣のカップルも二階堂に住んでいながらこれまでずっと予約が取れなくて、その日当日聞いてみたら席が空いていてすごくラッキーだったと喜んでいた。

メニューにならぶ料理の品揃えはフレンチらしいツボを押さえた感じでなかなか魅力的、僕は前菜に手長エビとチーズのラビオリ、メインは羊肉を選んだが料理の仕上がりとしては美味しい以上の何か「うわっ!」みたいなアピールはない印象を受けた。しかし冷製ラタトゥイユとか、デザートは素晴らしく、さらにチーズが相当旨いものを提供していてこれは驚いた。これら周辺が輝くと、食事全体が最終的には楽しく変わっていくので、ここは軽くフレンチを食べたいなという時に来るのが良いと思う。若いフランス人シェフはしっかりしたお店の右腕を務めてきた人で、出来上がった料理を運んでくれたりもするが、その時は寡黙という印象だ。むしろ奥さんの客への対応は気さくでとても気持ち良い。それが和める空気を持った店にしている。永く鎌倉で頑張って欲しいお店です。ワインリストは絞り込んだ感じで豊富ではなかった。

This small restaurant is run by a French chef and his Japanese wife all by just two of them. I actually tried to book a few times before without success, and it was my first visit this time (about a month ago). A friend from US visited me in Kamakura and I took him to Engakuji Temple. I did not forget to cover visiting the tomb of director Yasujiro Ozu for him being in the film industry.
The menu is quite charming with lots of French flavors, and I ordered ravioli of langoustine and fromage as a starter and lamb for the main dish. They were good but I felt they did not carry something sparkling that appeals over and beyond. On the other hand, small pot of cold ratatouille and the deserts were fantastic, and the cheese they offered was superb to my amazement. The chef occasionally brought the dishes to the table to serve for himself but he tended to be quiet. His wife was very friendly and we always felt comfortable. I thought this small place in Kamakura was comfortably suits with lighter French dinner or good lunch. I should also add that the wine list is relatively small.

ナクア白神ホテル&リゾート - Naqua Shirakami Hotel & Resort



五能線鰺ヶ沢にあるナクア白神は西武プリンスが元気な頃、スキー場を軸に開発されたリゾート施設のようだが、その後のビジネス環境が久しく厳しいのは明らかで、ゴルフコースも18ホールを残し残り半分は放棄され散策ルートとなっている。我々はこの夏、ここを休養場所に滞在した。訪れるのはバスツアーの団体客と車での旅行者が主体だと思うが、我々のような鉄道依存の旅行者はマイクロバスで駅からの送迎がある。
ここでは津軽平野から海の先に北海道まで望めるパノラマ展望をぼんやり眺める以外は特に何もせず、温泉と食事くらいというシンプルな滞在が予想外にとても快適だったのは偏に食事のおかげだった。普通のプランでは夕食はバイキングだが、最初の日我々はプラス2000円のディナープランにして静かなレストランでゆっくりの食事を選んだのだがこれが大正解だった。前菜や刺身は和の料理で入ってスープからフレンチに移るのだが、どの料理も盛りつけは綺麗で味付けも申し分なく、小さめのポーションの数々を堪能させてもらった。シェフは三上進さん、40代とのこと。
翌日お昼もここでランチとなったのだが、1500円コースがまたなかなかの内容だったので、これは写真で紹介しておこう。
実は通常プランのバイキングも2日目の夜に確かめたがしっかりと納得の内容で、蟹が食べ放題、サザエの壺焼きなどあり、量が重要な人にはこちらがお薦めになりそう。


Naqua Shirakami is basically a ski resort developed by Seibu Prince Group when they were uprising, but the business condition in recent years have been bitter and their golf course is cut down to 18 holes now abandoning the remaining half that only serves as walking area today. We picked this facility this summer to relax for a few days. Most visitors are of group bus tours and motor travelers, but those who rely on trains like us can request the pick up service to/from the hotel.
Doing nothing but just with the panoramic view of Tsugaru and even a part of Hokkaido beyond the sea, the stay was comfortably relaxing. Something that made the stay more fantastic was the meals here. The regular arrangement for the dinner is buffet, but we chose a proper dinner course for the first night which was absolutely right. It started with Japanese style hors d’oeuvres and sashimi, then switched into French with the broccoli soupe and thereafter. Each presentation was beautiful and the taste of small portions in variety was quite impressive. The chef, Susumu Mikami was said to be in 40’s.
We had lunch the next day in this restaurant, and the course menu of 1500 Yen was just great as you can see in the attached photos.
As for the buffet dinner in the regular plan, we tried it on the second day and confirmed it was actually quite good: variety of choices, beef, pork, pasta, or crab legs as much as you are satisfied.

NZ Bar - 根津のワインバー



根津のNZ Barに行った。何で飲み会に根津までと言うと、ここはニュージーランド・ワイン専門のバーという他にはない個性を放つ場所だからなのだ。我々は女将が並べてくれた4本のピノの中からChurtonを飲むことにした。開栓直後には個性的な地味を感じたが、基本的には優しい味のピノという印象だ。並行する料理にはラタトゥイユ、鰯のマリネ、アワビのソテーなどを注文したがどれも美味しかった。ここには実はNZのワインメーカーの面々も訪日中に息抜きがてらやって来るらしい。というかNZワインに一家言ある者はここに出没するに違いないという感じ。一方で、帰りがけに立ち寄る地元住民らしき客もちらほら入ってきて、この土地に根付いている雰囲気が頼もしい。時々行きたい。

山中湖のやまさと - Yamasato in Lake Yamanaka

三連休に山中湖に行く機会があって昼食に蕎麦を食べた。ネットで評判の良いやまさとに行ってみたら、かなりの順番待ち客が店の前にたむろしていた。名前をリストに書いて待つことしばし、ようやく案内された店内は広くて落ち着きがあり気持ち良い。いくつかテーブルは空いていたが、さばける客の量を考えて誘導しているのだろう。


バスの時間も気になるので僕は粗挽き田舎せいろのみを注文した。メニューの中には黒糖デザートもちょっと気になったのだが・・・。出て来たのは田舎そばにしては色白の細い蕎麦で、繊細な方向の作りだ。甘皮が混ぜ込まれて風味もある。蕎麦は喉ごしと言うが、この蕎麦はかなり硬めに茹で上げられているし、良く噛んで食べた方が甘みがじわじわと増して美味しいと思う。それでもせいろにありつくのに1時間ちょっとかかるとなると僕は敬遠気味だ。肝心の写真がボケボケで済みません!


During 3-day holidays in July, I had a chance to go to Lake Yamanaka and went to a very popular soba noodle restaurant, Yamasato, for lunch. There were bunch of people waiting to be called, and I had to put my name on the waiting list. After more than 30 minutes, I was guided to a large table inside. There were 2 classic rooms that were both spacious and comfortable. I saw several empty tables and understood that they brought the guests in according to their capacity of services. 

I had a bus to take and simply ordered country-style buckwheat noodles as shown in the "out-of-focus" picture above assuming it would be manageable in the limited time. The noodles were rather delicately white and thin for country style. We often say that the noodles are good when smoothly going through the throat, but I would rather recommend that you chew this one here much since the noodles are "al dente" and also the sweatness gradually emerges. I still question if you would love to be here if you know that you need to waste more than one hour before you have your plate in front...

サーモン・マリネを作る - Eurasian Delicatessen Dishes

昔、六本木のユーラシア・デリカテッセンがあった頃、良く買っていたお総菜と言えば、オイル・サーディンとサーモン・マリネで、何しろ美味しかったのであの味と食感はしっかりと基準のように自分の舌が憶えている。特別な工夫をしなくても、生鮭をスライスして、ワインビネガーとEVOでマリネ液を作り、薬味はローリエ・パセリ・ディルくらい、塩と砂糖を調整すると、雰囲気的にはちょっと似た感じになって気分はHAPPYだ。いつか、あのレア・チーズケーキにも挑戦してみたいと思っている。


Many years ago when Eurasian Delicatessen was in Roppongi, I used to buy oil sardine and marinated salmon, and the memory of its delicacy is still on my tongue. I make marinated salmon with a straightforward recipe myself, mixing wine vinegar and olive oil, adding laurel, parsley, dill, adjusting salt and sugar, and I am happy because it is good enough to recall Eurasian Deli. The real challenge is their rare cheesecake and I will try it someday.

Café Buruman - 弘前の可否屋葡瑠満


弘前城の今年の桜は数日遅れでまだ開花したばかり、ほとんどの枝は蕾だが、それでも今日は昼までに雨も上がり、一日でどんどん蕾が膨らんでいくのが分かる。花を巡ってたっぷりと散策した後のコーヒーブレイクは、文化センター近くのブルマンが良い。写真はキッシュとウィンナコーヒーで、大倉製陶の茶器で供される。コーヒーの値はやや張るが、ケーキ類はむしろお安い。レアチーズケーキは少々スポンジーな食感で、むしろオレンジケーキがしっとりして重みもあってお薦めしたい。



Hirosaki Castle Park has the largest variety of cherry trees in Japan, and its views are amazing. This year, the blooming is a few days late, and we could not have the fullest enjoyment today but the rain cleared up in the morning luckily for us to have a long promenade around the park. Café Buruman near the Cultural Center is the ideal spot for a coffee break after the walk. Shown here are quiche and Wiener coffee served with Okura porcelain. The beverage is a bit pricy while the cakes are more reasonable. The orange cake is recommendable which is dense and juicy.

Sadaharu Aoki's Moelleux Chocolat Maccha - 青木定治レシピの抹茶ショコラ菓子


青木定治が中山美穂を招いて一緒にケーキを作る番組をテレビで観て、これがなかなか美味しそうだったので挑戦してみることにした。しっとりとした生地の中からとろみのあるガナッシュが流れ出るモエルーと呼ばれる楽しいお菓子で、アオキのレシピはバターが51gとか、グラニュウ糖は59gとか、異常に細かい単位で指定されていて、「そんなにシビアなんかいな」と思いながら作り始める。

型を6個用意して、4-5個は取れるのかなと思っていたら、生地の量が2.8個分くらいしかできなかった。テレビでは生地のしたたり感も全然違っていて、全体が明らかにもっと多い量で作り込んでいたし、チョコレートを40℃の電子レンジで溶かすというのが全然うまく進まず、代わりに湯煎で処理した。オーブンで焼く時間は10分と言っていたが、うちではそれでは不十分で18分くらいかけた。シビアな割に信頼できないレシピだなという印象。しかしこの菓子の味は絶妙に素晴らしかった。自分なりのレシピが出来たらまたアップしよう。

I saw a cooking program on TV in which the renowned pâtissier Sadaharu Aoki invited the actress Miho Nakayama to make Moelleux Maccha Chocolat. It looked so tempting and I decided to try it myself.
Aoki’s recipe specified rather unusually detailed amount of things like 51 grams of butter and 59 grams of sugar, and I thought that the ultimate delicacy was so precise in cooking.

I prepared 6 muffin tins assuming the recipe would allow 4 or 5 moelleux, but it was barely enough to fill 3 tins. In the program, they were cooking apparently different amount. He showed how to melt the chocolate using the electronic oven set at 40 degrees C, but it did not work with mine, and I used a bowl on hot water instead. He specified 10 minutes for baking, but it was not enough here and it took me 18 minutes. Aoki’s recipe was precise but not exact in my opinion, but his gâteaux tasted absolutely outstanding.

鎌倉のスパニッシュ - Arashida


長谷寺に向かう由比ヶ浜大通りを久しぶりに歩いてみると、新しい店がポツポツと出現しているようだ。教会での演奏会の帰り道、至近距離にあるスペイン料理の店の評判を聞いて、行ってみることにした。建物の1階にはétéというフレンチの店があって、ここもいずれ試してみたいが、今日は2階のArashidaへ。
僕ら3人は三者三様に色々異なる料理を注文して、お互い相互試食もしてみたが、料理はいずれも細やかな味とプレゼンテーションを心がけていて気持ち良い。タパスの品数は本場のような多彩さはないので、今回は試していない。
僕はまずズワイガニ入りのロブスタースープゼリーを注文したが、これは絶品のスターターだった。メインに選んだイベリコ豚のワイン煮はジャガイモピューレとトリュフがあしらわれて、肉は軟らかく、ワインの風味もしっかりとしていた。どの料理にも重層的な味が組み込まれていて、単純ではない。
料理は合格点だが、サービスについてはさらなる精進が望まれる。当日の客は5組で我々以外はいずれも若いカップルだったが、これでテーブルへの目利きが不十分な状態。例えばお水は提供されない、パンを持ってくるタイミングが遅く、しかも頼んだパンの追加も出ず仕舞い、食後のテーブルのパン屑掃除もしない、エスプレッソのデミタスは突き返されておかしくないくらいぬるい状態。相当きびきびしたスタッフを入れないと、真にプロフェッショナルなサービスは難しそうだ。
それでもお店の雰囲気は良いし、料理もここまでの水準なら贔屓にしたいと感じたお店ではある。おすすめメニューなら、小さめのポーションでいろんな料理が楽しめるようになっているので、一度はそれを試してみるのも良いと思う。



There seems to be a few new shops popping up in Yuigahama Avenue (toward Hase Temple) in Kamakura recently, and we had dinner at a well-reputed Spanish restaurant after the concert in near-by Yuigahama Church on Sunday. The ground floor of the building was a French that was also interesting enough to visit at another opportunity, and we went upstairs this time.
At Arashida, we three of us ordered different dishes each other, and mutually sampled each bit of dishes for tasting. All the dishes had subtle mixture of different tastes in refined presentations that was quite enjoyable. Tapas was limited in the selection and we did not try this time.
I picked lobster soup gerée with crab meat for the starter which was superb. Then came Ibérico pork cooked in red wine with potato purée and truffles as my main dish, another excellent choice.
On the other hand, the service needs quite an improvement: There were total 5 groups the day, and the rest of us were all young couples, so this was 60% full situation and yet there were definite lack of eyes to the tables. For example, they did not serve water, the bread came late and even worse was they did not bring additional bread that we requested,  no cleaning the debris of bread on the table before the desert, and espresso was brought rather cold. Someone who can smartly and quickly act will be needed for truly professional servicing here. Still, I would like to come back considering the good overall atmosphere and the level of enjoyable quality dishes.
